Le Millassou
If you like good local cuisine cooked with simple ingredients, don't miss Millassou or Milhassou (both spellings are possible!), this traditional recipe from Correze that is 100% Gaillarde.
The ingredients
- 1kg de pommes de terre (Agata)
- 3 gousses d’ail
- 1 bouquet de persil
- Sel / poivre
- 2 grosse cuillère à soupe de graisse de canard (c’est meilleur !) ou 2 c à s d’huile
- Temps de préparation : 10 min
- Temps de cuisson : 20 min
- Pour 4 personnes
Préparation du milhassou
- Peel the potatoes and grate finely. Add the crushed garlic cloves and finely chopped parsley. Season generously with pepper and salt. Mix well.
- Heat the duck fat in a frying pan and pour in the mixture. Brown (about 10 minutes). When the mixture becomes compact, turn over with the help of a dish and cook the other side, also for 10 minutes.
- The top of the millassou should be crispy on the outside and soft on the inside.
