Similar to clafouti, the recipe for flognarde or flaugnarde (both spellings are possible) is made with apples, and even better with PDO apples from Limousin. But any other fruit in season will do: pears, grapes, strawberries, etc.

The ingredients

  • 60g de farine
  • 100g de sucre
  • 75cl de lait tiède
  • 3 œufs
  • 300g de pommes « reinette »
  • 50g de beurre
  • 2 sachets de sucre vanillé
  • Sucre glace
  • Sel
  • Temps de préparation : 30 min
  • Temps de cuisson : 20 min
Apple flognarde

Préparation

  • Pour the flour, sugar and salt into a bowl. Add the eggs one by one, mixing carefully with a wooden spoon to avoid lumps.
  • Gradually stir in the milk.
  • Generously butter an earthenware dish.
  • Peel and finely chop the apples.
  • Arrange them in the dish.
  • Sprinkle with vanilla sugar and dot with butter flakes. Pour the pastry over them. Bake for 30 minutes in a preheated oven at gas mark 7 to 8 or 220°.
  • Enjoy warm, dusted with icing sugar
