BRIVE-LA-GAILLARDE
It's the story of a wonderful meeting of chefs, all qualified in cookery, owners of their own establishments, practising a singular cuisine based on fresh produce, favouring short circuits.
"Les Tables Gaillardes" is an Association of Brivois chefs created on 19 April 2013. The chefs have drawn up a Quality Charter setting out the values of the Association.
Today there are nine restaurateurs who have joined forces:
This group of friends of good food has launched "Les Tables Gaillardes", a serious initiative that doesn't take itself too seriously, by getting together around a strong idea: to get the word out and promote the authentic gastronomy of Brive. Les Toqués du Goût is all about good humour and local produce, two of Brive's hallmarks!
In 2020, Brive Tourisme set the Tables Gaillardes chefs a challenge: they had to make a recipe that was easy to reproduce, using a local product chosen at random. Each chef also had to comply with a specific production requirement. The challenge was a great success and led to some wonderful discoveries.

Ten chefs have come together to raise the profile of Gaillard gastronomy. With "Les tables gaillardes" and their quality charter, raw (and cooked....) cuisine is now within everyone's reach. Each has their own style, but what they all have in common is a taste for well-crafted, inventive dishes. Throw over your pig, my great chef friend: you'll see, you'll be back for more...
